recently i 'invented' a new dinner salad for spring...and i must say it's pretty darn good!
i call it asian chicken salad
ingredients (layer on plate): mixed greens, green onions sliced on the diagonal, slivered almonds (i use blanched, not raw), 1/2 a can of madarin oranges (per salad), home made croutons*, newmans asian ginger (?) salad dressing, sliced grilled chicken, sesame seeds
*the homemade croutons really made this salad...i just cubed up some leftover artisan bread from the grocery store and sort of sauteed it in a cast iron pan and kept spraying it with olive oil spray until it was golden brown and crunchy...but they stay a wee bit soft and chewy on the inside...they are heaven, heaven!!! try making some and let me know what you think
when they come in season, i think i'll try adding fresh blueberries as well...they would be nice paired with the mandarin oranges...
and i also had a small glass of white wine with my salad, red wine would not be very good with this particular salad...i had it in a tiny milkglass goblet from the great aunt's house
