a recipe from last week...

for reals, i don't even really remember what i did over the weekend! it was VERY warm here (80s) so i spent lots of time outside...we grilled out...i made a chinese dish (recipe tomorrow)...i baked snickerdoodle blondies (they were awful...so no recipe, ever)...and finished up a large custom etsy order...



so in lieu of anything better to post...i found this post lost in the 'editing mode' for the 2nd chicken and rice dish i made LAST LAST weekend:



simple chicken and rice...comfort food at it's best



most of the ingredients



also need mushrooms...i like these baby bella ones a lot




dish ready to go in oven...this one's nice because there is NO precooking anything at all




all done...would pair nicely with a green salad or vegetable...

Ingredients :
2 cups uncooked jasmine rice
1 (14-oz.) can chicken broth
3/4 cup buttermilk
1/2 cup dry white wine*
1 (8-oz.) package sliced fresh mushrooms
2 teaspoons salt, divided
1 (3 1/2 lb.) cut-up whole chicken (i used split breasts, bone in instead)
1/2 teaspoon pepper
3 tablespoons chopped fresh parsley (i totally forgot to use the parsely even though i purchased it specially for this meal...drats...)


Preparation
1. Preheat oven to 350º. Stir together rice, chicken broth, buttermilk, wine, mushrooms, and 1/2 tsp. salt. Spoon rice mixture into a lightly greased 13- x 9-inch baking dish. Sprinkle chicken with pepper and remaining 1 1/2 tsp. salt. Place chicken on top of rice mixture.


2. Bake, covered, at 350º for 1 1/2 hours or until chicken is done. Sprinkle with parsley just before serving.


*1/2 cup chicken broth may be substituted.

verdict: YUMMO! we made 5 meals off of this dish including using some of the chicken shredded up in quesadillas when the rice was gone...i highly recommend this recipe
