happy fall!

happy fall, y'all! i whipped up a batch of cupcakes last nite just for you ;-)

pumpkin spice cupcakes ~ adapted from martha stewart

makes 22 cupcakes (yeah, I know…that’s a very odd number!)

· 2 cups all-purpose flour
· 1 teaspoon baking soda
· 1 teaspoon baking powder
· 1 teaspoon salt
· 1 teaspoon ground cinnamon
· 1 teaspoon ground ginger
· 1/4 teaspoon freshly grated nutmeg
· 1/4 teaspoon ground allspice
· 1 cup packed light-brown sugar
· 1 cup granulated sugar
· ½ cup applesauce
· ½ cup vegetable oil
· 4 large eggs, lightly beaten
· 1 can (15 ounces) pumpkin puree

1. preheat oven to 350 degrees. line cupcake pans with paper liners; set aside. in a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and allspice; set aside.
2. in a large bowl, whisk together, brown sugar, granulated sugar, butter, and eggs. add dry ingredients, and whisk until smooth. whisk in pumpkin puree.
3. divide batter evenly among liners, filling each about halfway. bake until tops spring back when touched, and a cake tester inserted in the center comes out clean, 20 to 25 minutes, rotating pans once if needed. transfer to a wire rack; let cool completely.

vanilla bean cream cheese frosting

· 8-ounce cream cheese, room temperature (I used 1/3 less fat)
· 1 stick of unsalted butter, room temperature (trust me, unsalted is the ticket)
· approx. 3 cups confectioner’s sugar
· 1 teaspoon vanilla bean paste (can use regular vanilla)

beat cream cheese (by hand with wooden spoon) until softened. mix in butter until smooth. add sugar 1 cup at a time until desired consistency. add vanilla bean paste. frost cupcakes, lick fingers frequently.

it's almost time to break out the sweaters and hot cider...

That is one of my favorite cakes, I make a carrot cake this weekend but those cupcakes sound better. I bet your house smelled good while they were cooking.

Actually we're back to shorts, T-shirts, and flip flops here in the Midwest. We're definitely having an Indian summer. Your cupcakes look yummy!
