cooking with norman

apologies for lack of blogging this week...i'm very busy at work what with co-worker still on maternity leave for 19 more days (yeah, i'm ticking off the seconds until she returns) and last friday being the temp's last day...so blogging took the backseat this week...hopefully next week will be less busy and i can do some meme's i've seen floating around and 'accept' my awards that have been bestowed upon me...

anyhoo...when we met up with norman's people last saturday they came bearing gifts! veggies from their garden:


on sunday evening i decided to pair the larger squash and a zucchini (the lighter green one) with some trader joe's general tsao sauce and make a healthy version of chinese takeout:

i sauteed norman's veggies with an onion and red pepper...



added some chicken, tossed it in the sauce and served it over brown rice:

we paired it with one of the wines we purchased on saturday...norman, does this serve as further proof that we actually meet your people? do you recognize your vegetables? don't blame us that you weren't brought along - rest assured we invited you...but there was some excuse about how you don't do 'well' in cars...admittedly, however we did see a sign that said 'no dogs allowed' at one vineyard so maybe it's better you didn't tag along...

in an effort to be more prepared for meals during the week, while cooking up some of norman's veggies i sauteed a sweet potato in olive oil and sea salt, saved out some of the onion and 2 pieces of chicken (not shown)...

then on monday nite i made a pizza:

whole wheat crust brushed with olive oil and garlic, sauteed sweet potato slices, mozzarella, cheddar & goat cheeses, shredded chicken, sweet onion, fresh sage, thyme & oregano...it was really good and paired nicely with the remaining wine from sunday nite.
BUT i still had some of norman's veggies and the husband harvested a lot of roma tomatoes so i put on my thinking cap and made up a rustic tomato pie:
whole package of refrigerated pie crusts stacked on each other over a cornmeal sprinkled pizza stone, sliced tomatoes, quartered zucchini, gouda cheese, swiss cheese - that's it! baked at 375 for about 45 minutes...try it, i guarantee you will love it...this weekend i'm going to use up the rest of norman's veggies and need to come up with something to do with our bumper crop of jalapenos.

That pizza looks sooooooooooo good! I wonder if I could use some of my cherry tomatos on one?!

My mom just gave me a bunch of tomatoes and that pie sounds just like the answer! yum.

Holy cow that looks like some good food, but I've never seen those veggies in my life.
