i say tomaTOE...

the husband harvested his first really good roma tomato on monday so tuesday nite i made a tomato philo pie:

it was so good that words cannot even do it justice...if you like tomatoes at all you should make this immediately...tonite...yesterday...

served with alexia's potato nuggets and south carolina red wine

tyler even looked for crumbs!

tomato philo pie

8 sheets philo dough (thawed, ready to use)
1/4 cup melted butter
2 smashed cloves of garlic
3 tomatoes (red, orange, etc) sliced
1 cup shredded mozzarella cheese
4 ounces feta cheese
1/3 cup fresh basil leaves, torn

heat oven to 350 and lightly grease a jelly roll pan or cookie sheet. layer the philo sheets brushing each sheet with the melted butter combined with the garlic before adding the next sheet. put mozzarella on philo leaving about 2" all around. place sliced tomatoes over mozzarella, top with feta and basil...bake about 20-25 minutes. enjoy!

That looks soooo good, I'm going to have to try that minus feta cheese though.

that looks like heaven! My inlaws are just starting to see their tomato plants turn red. they have a lot of green ones. they planted squash too.

WOW that looks GOOD! We're going to have to try that when our tomatoes ripen. We've still got 2 weeks or so though!
