recipe for sarah's mom

buttercream frosting for lemonade cupcakes

3 cups + 3 tbsp confectioner’s sugar
1 stick unsalted butter at room temperature
1/8 tsp salt
2 tbsp lemon juice
zest from 1 lemon

beat the butter and confectioner's sugar with a mixer until smooth. add salt, lemon juice and zest and beat at medium speed until fluffy - about 5 minutes. if frosting seems to thin, add more sugar. frost cupcakes and enjoy!
