weekend in review

why do weekends fly by?

friday nite we visited with 'M' and her mother for a bit...as she continues to recuperate from her 'near surgery'. i remember absolutely nothing else about that night except that we had a salad with strawberries and goat cheese for dinner.

saturday morning we took 'M' and her mother to the farmer's market in wake forest, nc...we had never been before...we got there after 10am and i think a lot of stuff was already gone, although it seems like there aren't many fresh vegetables available yet anyways...we did see the goat cheese lady and stocked up until we go back to the moore square market on wednesday. oh, there was a lady 'selling' baby bunnies...i didn't get a picture but they were the cutest, tiniest, softest things i've ever seen ever! she pretty much said cats would eat them so that was the end of us even thinking of getting one. after the market we went to starbuck*s for some limited edition orange creme frappaccinos. if you haven't had one...go get one...they are very yummy (and have no coffee in them). after returning 'M' to her house we did our weekly grocery stop and then went home...i was feeling like a nap so i started watching 'clockwatchers' and fell asleep...i finished it later...don't waste your time renting it.

sunday brought blessed rain finally! i honestly cannot recall the last time it rained...the husband helped me make the other fabric covered bulletin board for the closet doors in girlville (yeah, i super procrastinated on that one), i piddled around and organized all of my craft supplies in cigar boxes and labeled them, cleaned the downstairs (i always fizzle out by time i get to the second floor), did umpteen loads of laundry, made couscous and black bean salad for our week's lunches, made cupcakes and sauteed up some chicken strips for quesadillas for the week's dinners.

may i interest you in a cupcake?

these are chocolate orange cupcakes made from a trader joe's mix...i invented orange cream cheese frosting to go on them:

orange cream cheese frosting for 12 cupcakes

  • 4 ounces cream cheese, softened
  • 2 tablespoons butter, softened (i always use unsalted butter)
  • 1/2 teaspoon vanilla bean paste
  • 1 teaspoon pure orange extract
  • 2 1/2 cups confectioners sugar

with a hand mixer, beat the cream cheese, butter, vanilla bean paste and orange extract until fully incorporated. add confectioners sugar in 3 additions mixing well between. frost cupcakes and enjoy!

this frosting tasted like the starbuck*s orange cream frappaccino to me! it would be really good on some plain vanilla cupcakes too.

after a dinner of chicken quesadillas, the husband retired to his upstairs den and i watched 'stranger than fiction' and worked on a super secret project with my cute assistant, kady:

but she was way more interested in getting a belly rub...

then she got super sleepy...

until her daddy came stomping down the stairs (not really, but kady is a fraidy cat)...and she had to check out the situation...sometimes she sits up on her hind legs when she is 'listening' upon which she look like a meerkat or a groundhog or something...unfortunately she didn't do that last nite...but here she is in an 'on-guard' pose...

kady cannot give her opinion of the movie since she retreated to her room before the movie was over...but i thought it was ok...i give it 3 outta 5 stars.

and that was the weekend.

Miss Kady looks so content! I see yarn in that picture...you must be doing some chochet or knit project?? I just hit a sale at AC Moore Sunday night and stocked up to make a baby blanket for a friend.
