weekend cooking...

lots of cooking this weekend! a couple of weeks ago we bought a small tub of 'habanero jack cheese spread' from the deli case in the grocery. it was really good but $$$. so i decided to try to recreate it myself. last tuesday while we were at bj's i found cabot hot habanero cheese (scroll down it's about the 3rd one). the other ingredients listed on the spread were cream cheese, roasted red peppers, onion, garlic and a few other things i'm not sure what they were...preservatives maybe? today i made my version:

mise en place

hot habanero cheese spread

  • 16 ounce tub of soft cream cheese (got this size from bj's)
  • 2 1/2 cups of cabot hot habanero cheese, shredded
  • approx. 1/2 of a roasted red pepper
  • 1/2 tsp. garlic (i used garlic from jar because that's all i had)

mix everything in food processor until thoroughly combined. place into a container and cover. refrigerate for at least 2 hours to allow flavors to combine.


the spread is nearly identical to the grocery store's. it's hot...consider yourself warned.

saturday nite i made hot wings and homemade macaroni and cheese. the wings were just baked for an hour at 425 degrees and then tossed with a small bottle of frank's red hot sauce and some melted butter. simple yet good.

homemade macaroni and cheese

melt butter in a large sauce pan over medium and whisk in flour. cook for about 1 minute. whisking constantly add milk and cook over medium stirring constantly until slightly thickened (this takes some time). add cheeses and stir until melted and combined. pour cheese sauce over macaroni and toss to coat. put in a buttered dish and bake at 350 degrees for 45 minutes or until bubbly and slightly browned.

i also made chicken quesadillas (will share that recipe later in the week) and 2 batches of paula deen's banana bread to freeze for weekend breakfasts.

it was a yummy weekend! i think i need to go on a diet now...

What? No pictures of the wings? MY husband would have LOOOVED them!

am, we ate the stuff so fast i forgot to take pictures of anything last nite (there's only a pic of the mac/cheese cause there were leftovers). i'll do the wings again and take a pic just for him ;-)

Yum, let me know when you cook that again and I'll be right over. Everything looks really good, my husband likes to recreate things we've bought too. Banana bread is my FAV!

HELLO!!!! all that food looks so very good. I am so glad you share your food with us! I like the napkins too. I had a savory seafood cheesecake appetizer at Emerils in New Orleans and it was so very good. I have wanted to recreate a savory cheesecake like that but I would be the only one to eat it .. me and Aunt Sue! Guess I'll have to wait until we ever have a get together with enough people to eat it.
