pasta recipe

here is the 'recipe' from yesterday's baked pasta creation. i pretty much just made it up so i can make no promises regarding how it would turn out for you...i make up recipes all the time but rarely write them down. the husband had it for lunch today and said it was yummy...he gave it 4 out of 5 stars. and for all you vegetarians it's meatless!

baked faux lasagna

1 package of penne pasta cooked according to package directions except boil 1 minute less than suggested time (i used whole wheat)
1 small container ricotta cheese (full fat, low fat, fat free – you decide!)
¼ cup parmesan cheese - i didn't measure this
1 egg
1 tablespoon dried parsley - i didn't measure this
1 package frozen spinach thawed - drained or squeezed dry
1 jar of marinara sauce (i used trader joe’s tomato and basil marinara)
1 cup of mozzarella - i didn't measure this

preheat oven to 350. mix together the ricotta, parm, egg and parsley in a small bowl. spray pan (i used 11x7 pyrex but it was borderline too small) with non-stick spray and put half of penne in bottom. spoon/spread the ricotta mixture over the penne. sprinkler the spinach over the ricotta and top with about half the marinara sauce. layer remaining pasta and top with rest of marinara. bake at 350 for about 20 minutes, remove from oven and top with mozzarella and bake another 10 minutes or so til cheese is melty and bubbly on top. let rest 10 minutes before serving.

thanks y'all, i had the faux lasagna for lunch today and it was really good. the only thing i will do different next time is use fresh spinach instead of frozen.
